A few weeks ago, we harvested our sweet potatoes that we planted back in June. On average, sweet potatoes take about 120 days to mature. To check if they are ready, carefully dig around where the roots go into the ground and take a peek. The potatoes can be harvested at any stage of maturity, but we usually harvest once they’ve developed to about the same size as the ones you find in the grocery store. This year they thrived so we had a very large harvest! Since then we have been using them in a variety of recipes. We preserved most of the potatoes by steaming and freezing them in Ziploc bags. That way, they can be enjoyed all year long. Here are some of our favorite recipes!
- Sweet Potato Pancakes: I usually change the spices in this recipe and add ½ tsp cinnamon, ¼ tsp allspice and only ¼ tsp nutmeg.
- Sweet Potato Pie: I omit the whiskey and molasses and use only ½ tsp of nutmeg.
- Sweet Potato Casserole: This is a delicious dish to serve for Thanksgiving!
