Green Recipes for St. Patrick’s Day!

We have cilantro growing like crazy in the garden, even though we didn’t plant any! All the plants are volunteers that popped up this winter. Cilantro is one of our favorite herbs so here are some easy green recipes that will be great for your St. Patrick’s Day!

 

Spicy Cilantro Hummus

  • 2 cans garbanzo beans, drained (reserve juice from 1 can)
  • 2 large jalapenos chopped, seeds and veins removed
  • 1 cup fresh cilantro
  • 4 tbsp tahini paste
  • 3 large garlic cloves
  • 3 tbsp lemon juice
  • 1 tsp salt
  • ¼ tsp cayenne pepper
  • ½ tsp cumin

Add all ingredients to food processor. Process until smooth, adding enough bean juice until desired consistency is achieved.

Green Rice

  • 2 cups fresh spinach
  • ½ cup fresh cilantro
  • ¼ cup chopped canned green chilies
  • 1 tbsp vegetable oil
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1 cup long grain rice
  • 2 cups water
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp pepper

Process spinach, cilantro and green chilies along with ½ cup water until pureed. Heat oil in pan on medium heat. Saute onion until translucent. Add garlic and cook a few more minutes. Add rice, spinach puree, water, and spices. Cover and cook until the rice is done, about 10 minutes.

Cilantro Citrus Dressing

  • 1 ½ cups fresh cilantro
  • ½ cup vegetable oil
  • ¼ cup lemon juice
  • 1/3 cup orange juice
  • 2 garlic cloves, minced
  • ½ tsp salt

Place all ingredients except oil in food processor. Turn processor on and add oil in slow stream until emulsion has been formed.
