As we prepare for Fall planting, I look at what we have achieved from this year’s Spring harvest. I am amazed by how much we managed to preserve in addition to what we ate fresh. The following is a sample of what we currently have in the freezer: corn, peas, green onions, spinach, chard, kale, apple sauce, apple pie slices and green beans. We also dried tomatoes, pickled beats, canned marinara sauce, and made fig jam. So now we are back in the soil preparing for the next harvest!
